turkey casserole recipe

This is a quick and easy recipe for shepherd’s pie that is perfect for parents on the move!

Ingredients
1 lb. ground turkey (or ground beef)
1 Tbs. dried onion
1 20-oz. can vegetable soup
1 can creamed corn
1 box instant mashed potatoes
1/2 C. shredded cheddar cheese
Directions
Brown the ground turkey and dried onion. Drain. Put meat into a casserole dish. Add vegetable soup and creamed corn. Mix well. Prepare instant potatoes per box directions. Spread potatoes on top of mixture. Bake at 400 degrees for 20 minutes. Spread cheese across potatoes and bake for additional 5 minutes. Cool and serve.

I’ve done it all: soup, sandwiches, salads, cold buffet platters, you name it. But one of my favorite treatments for leftovers is a traditional French recipe that is most often used for leftover roast or braised beef, although it works great with turkey, chicken, ham, or even seafood such as leftover salmon.

Ingredients
4 C finely diced leftover turkey meat
1 Tbs. extra-virgin olive oil
3 Tbs. unsalted butter
1 yellow onion, finely chopped
2 garlic cloves, minced
1 small sprig fresh thyme or sage
1 C. dry red wine
1/2 C. leftover turkey gravy
Salt
Fresh ground black pepper
3 C. mashed potatoes, made with butter and cream
4 oz. grated Parmesan cheese or shredded Swiss cheese or mozzarella
1/4 C. fine breadcrumbs

Very good for home or carry out, if you like cabbage you will love this, can be spicy or mild. I got this from a good friend and revised it a bit from his. Also good Weight Watchers dish if following their plan, this is about 7 points for 1 3/4 C. per serving.

Ingredients
1 small head of cabbage, sliced or diced
1 C. diced celery
1/2 C. diced carrots
1 medium bell pepper, diced
1 medium onion, sliced
2 lb. ground turkey, browned
1 pkg. each taco and chili seasoning
1 15 oz. can diced tomatoes with basil, oregano and garlic
1 small can tomatoes with green chilies
1 1/2 C. brown rice
2 10 3/4 oz. cans tomato soup
Season to taste with garlic powder,salt, pepper, chili powder and any other seasonings you like

This is an easy and delicious way to use up leftover chicken or turkey. Have dinner on the table in a half an hour!

Ingredients
3 C. cooked turkey or chicken cut in bite size pieces
1 10 oz. pkg frozen mixed vegetables, thawed
2 pkg. gravy mix
Biscuits or rolls, enough to cover entire 13×9 pan
Directions
Cook gravy as directed on package. Mix in vegetables and meat. Stir and cook 1 minute. Pour into greased 13×9 pan. Place biscuits on top, covering pan. Bake at 350 degrees for 30 minutes or until the tops of the rolls/biscuit are lightly browned. Time will vary depending on the type of biscuit/rolls you use.
