Chicken Rice Gumbo Recipe

A wonderful blend of chicken, rice and fresh herbs combined to make a gumbo with a spicy kick.

Ingredients

3 cans (14-1/2 oz. each) reduced sodium chicken broth
1 lb. boneless skinless chicken breasts cut into bite-size pieces
1 can (15 oz.) whole kernel corn, drained
1 can (14-1/2 oz.) stewed tomatoes, no salt added, undrained, chopped
1/2 tsp. hot pepper sauce
1/2 C. Minute Premium White Rice, uncooked Premium Saltine Crackers, any variety

Directions

Heat all ingredients except rice and crackers in large saucepan on medium-high heat to boil. Reduce heat to low; cover. Simmer 15 minutes. Stir in rice; simmer an additional 5 minutes or until chicken is cooked through and rice is tender. Serve with crackers.

Mexican Chicken and Rice Casserole Recipe

This Mexican chicken and rice casserole be made from leftovers or with fresh chicken. It’s great with chicken but you can also use other meats of your choice!

Ingredients

1 lb. chicken, cooked and cubed (or other meat)
3 C. rice, cooked
16 oz. sour cream
1/2 lb. shredded cheese (mozzarella, Monterey Jack or cheese of your choice)
1 4-oz. can green chilies, chopped
Parmesan cheese
black olives for garnish (optional)

Directions

Layer first five ingredients in a casserole baking dish, repeat until ingredients are all used, garnish with olives. BakeĀ  at 350 degrees for 25 minutes, until shredded cheese is bubbly and melted. Sprinkle with Parmesan cheese and bake for 5-10 additional minutes or until top is brown.

Chicken, Rice and Green Chili Casserole Recipe

This was a blue ribbon winning dish at the Los Angeles County Fair of 2004. This is truly a dish to share at any potluck.

Ingredients

1 C. long grain rice, cooked
2 C. water
1 8 oz. pkg. Mexican cheese blend, reserve 1/2 C.
1 C. dairy sour cream
1 1 oz. package Hidden Valley Ranch Salad Dressing & Seasoning Mix
1 7 oz. can diced green chilies
1 12.5 oz. can white chicken in water or broth, drain, separate and reserve liquid

Directions

Rinse rice with cold water until clear. Put rice in small saucepan with the 2 cups of cold water. Cover with lid and bring to a boil and simmer on low for 20 minutes. Remove from heat and let cool.
