Ingredients
1 3-4 lb. chicken, boiled and seasoned with salt and pepper to taste
1 lg.onion, chopped
1 lb. grated American or cheddar cheese
1 regular bag tortilla chips, crushed
1/2 can Rotel tomatoes, mashed
1 can cream of mushroom or cream of chicken soup
Directions
Debone chicken and place in the bottom of a 9×12-inch baking pan. Place chopped onion on top of chicken. Place grated cheese on top of onion. Place crushed chips on top of chesses. Mix together Rotel tomatoes and soup, and pour over crushed chips just before you place the casserole in the oven. Bake at 350 degrees until heated through and cheese is melted, about 45–60 minutes.

Ingredients
1/2 C. flour
1/4 tsp ground black pepper
2 eggs
2 Tbs water
1 C. puffed rice cereal, crushed
1 C. grated Parmesan cheese
1 package dry onion soup mix
6 (4-6-oz.) fresh boneless, skinless chicken breasts
1/4 C. butter or margarine, melted
Directions
Preheat oven to 375°F. Coat a 13×9x2-inch baking pan with vegetable cooking spray. In a shallow dish combine flour and pepper. Beat eggs and water in a small bowl. Combine rice cereal, Parmesan cheese and onion soup mix in a bowl. Dredge chicken in flour mixture, followed by a dip in the eggs. Roll in cereal until evenly coated. Arrange in a single layer in prepared baking dish and drizzle with melted butter. Bake, uncovered, for 30 minutes or until done. Serve warm.

1 C. chicken broth
1 (10.75 oz.) can condensed cream of chicken soup
1 (10.75 oz.) can condensed cream of mushroom soup
2 Tbs. soy sauce
1 (2 to 3 lb.) whole chicken, cut into pieces
4 C. hot cooked rice
1 C. cashew nuts
Directions
Preheat oven to 400 degrees. Combine the broth, cream of chicken soup, mushroom soup, and soy sauce in a large saucepan and bring to a boil; add chicken, rice and 3/4 cup cashews. Mix well and pour mixture into a 9×13-inch baking dish. Sprinkle remaining 1/4 cup cashews on top. Bake for 20 to 25 minutes, or until chicken is cooked through and no longer pink inside.

Boneless skinless white chicken breast
raspberry juice
Orange juice
Directions
Rinse the chicken breasts first and remove any fat. Marinate in raspberry and orange juice. Let marinate for a while. Drain and then place in the warm oven at 350 degree. Bake until cooked. Prick it with a fork until there is no blood from the chicken. Serve with a salad.

1 can cream of mushroom soup
1/3 C. milk
16 oz. pkg. frozen California blend vegetables, thawed
1 1/2 C. cubed cooked chicken
1 1/2 C. shredded Swiss cheese, divided
2 oz. jar diced pimientos, drained
Salt and pepper, to taste
Hot cooked rice
Directions
In a bowl, combine soup and milk. Stir in vegetables, chicken, 1 1/4 C. cheese, pimientos, salt, and pepper. Transfer to a greased 9- inch square baking dish. Cover and bake at 350 degrees for 40 minutes. Uncover; top with remaining cheese. Bake 5-10 minutes longer or until bubbly. Let stand for 5 minutes. Serve over rice.

1 C. almonds, slivered
1 8 oz. can sliced water chestnuts, drained
1 4 oz. can sliced pimentos, drained
2 C. celery, chopped
1 10 oz. can cream of chicken soup
1 C. Cheddar cheese, shredded
1 1/2 C. mayonnaise
1 Tbs. lemon juice
1 tsp. salt
1/2 tsp. pepper
1 3 oz. can French-fried onions
Directions
Combine chicken, almonds, water chestnuts, pimentos, celery, soup, cheese, mayonnaise, lemon juice, salt and pepper in a large bowl; mix well. Spoon into a 9×13-inch baking dish.
