Ingredients
1 lb. ground turkey breast
1 medium onion, chopped
2 C. each: tomato sauce and enchilada sauce
1 can (15 oz.) pinto beans and juice
12 corn tortillas
3 C. grated fat-free cheddar cheese (10 oz.)
1/2 C. sliced black olives
Directions
In a large, heavy skillet sprayed with nonstick spray, brown ground turkey and chopped onion over medium-high heat, stirring constantly. Add tomato sauce, enchilada sauce and beans with juice. Heat until simmering. Put a layer of meat sauce in a large casserole sprayed with nonstick spray. Add a single layer of 3 tortillas. Add another layer of meat sauce. Cover with 1/4 of the cheese and olives. Repeat three more layers of 3 tortillas, meat sauce, cheese and olives. Bake in a preheated 325 degree oven for 50 to 60 minutes, or until hot.

6 chicken breasts, cooked, diced
2 C. sliced fresh mushrooms
1 1/4 C. chopped onion
1/2 C. chopped bell pepper
2 Tbs. minced jalapeno pepper
1 4 oz. can chopped green chilies
1/4 C. milk
3 Tbs. all-purpose flour
1 1/2 C. water
3/4 tsp. chili powder
1/2 tsp. salt
1/2 tsp. ground cumin
1/4 tsp. pepper
8 corn tortillas
1 C. shredded cheddar cheese
1/2 C. tomato, chopped, unpeeled
1/4 C. sour cream

A casserole using leftover chicken and gravy. You can also use turkey. Serve with salsa, shredded lettuce, sour cream and black olives if desired.

Ingredients
4 C. diced skinless, boneless chicken breast meat
4 C. chicken gravy
1 C. water
1 onion, chopped
3 stalks celery, chopped
1 7 oz. can diced green chilies
1 tsp. garlic salt
Salt and pepper to taste
12 6 inch corn tortillas
2 C. shredded Cheddar cheese
Directions
In a large skillet combine chicken, gravy, water, onion, celery, chili peppers, garlic salt, salt and pepper. Stir together to mix. Cover skillet and simmer over low heat for 1-2 hours. Preheat oven to 350 degrees. In a 11×14 inch baking dish layer 6 tortillas, then 1/2 of the chicken mixture, then 1/2 of the cheese. Repeat layers. Bake in the preheated oven for 30-40 minutes or until cheese is melted and bubbly.
