Ingredients
* 1/2 C. Pepperidge Farm® Herb Seasoned Stuffing, crushed
* 2 Tbs. grated Parmesan cheese
* 2 Tbs. butter, melted
* 1 can (10 3/4 oz.) Campbell’s® Condensed Cream of Broccoli Soup (Regular or 98% Fat Free)
* 1 C. milk
* 1/2 C. shredded mozzarella cheese
* 1/4 tsp. garlic powder
* 1/8 tsp. ground black pepper
* 1 C. elbow pasta, cooked and drained
* 2 C. cubed cooked chicken
* OR turkey
* 1 pkg. (10 oz.) frozen peas and carrots, cooked and drained

Under Crock Pot+ Global Cuisine
As I live in Texas, Mexican recipes are a big part of who I am as a cook. I love the festive flavors. Combining two of my favorite Mexican dishes, posole (hominy stew) and chicken mole (chicken in sauce), this stew will bring a warm spirit of Cinco de Mayo to dispel the winter doldrums! Serve with fresh made quesadillas filled with spinach and cheese and good Mexican beers or sangria.

Under Crock Pot
This is a lighter version of my Chicken and Gravy with Pasta but it is still delicious. Serve with buttered rice or cheesy mashed potatoes.

Ingredients
1 lb. chicken (I use tenderloins but you can use any boneless parts you prefer)
2 cans or jars chicken gravy (any brand)
1/2 bag baby carrots
1/2 tsp. dried parsley
2 C. mashed potatoes, already prepared
Directions
Salt and pepper chicken. Add 1/2 can gravy to room temperature slow cooker. Add seasoned chicken on top of gravy. Add remaining 1/2 can of gravy. Add carrots and cover. Cook on high for about 3 hours, or until chicken shreds with two forks.

Being full-time RVers, my husband and I are frequently on the road in our 40 foot motor home. I often put dinner up in the crock pot in the morning, set the crock pot into the kitchen sink and let it cook all day as we travel. By the time we get to our destination, our mouths are usually watering for a scrumptious meal we’ve been smelling all day long.

Ingredients
2 lbs. cooked boneless, skinless chicken breasts (you can substitute coarse ground or diced beef chuck, round steak, stew meat, venison, or turkey)
1 lg. can diced tomatoes (or Rotel tomatoes)
1/3 C. chili powder
1 Tbs. minced garlic
2 tsp. ground red pepper
1 Tbs. paprika
1 tsp. cumin
2 tsp. salt
1 Tbs. onion flakes
1 tsp. oregano
2 Tbs. Masa or any thickening agent
2 cans great Northern beans
2 cans kidney beans
1-2 C. chicken broth

Under Creamy/Cheesy+ Crock Pot
This is a very tasty and easy recipe for creamy chicken! We make it at least once a week. Hope you like it as much as we do. We serve it with mashed potatoes.

Ingredients
1 8-oz. pkg. cream cheese
2 med. cans cream of mushroom soup
2 lbs. chicken tenders
1 packet dry Italian dressing
Directions
Put the cream of mushroom soup and dry Italian dressing mix in bottom of crock pot and mix together. Put the chicken tenders on top (Do not need to mix). Then cut the cream cheese into small cubes and put on top of the chicken. Cook on low for about 4-6 hours.

As a working mom, I was always looking for slow cooker recipes. This is one that was a big hit with my family and everyone that I have served it to since has raved about how delicious it is. Another yummy use for spaghetti pasta.

Ingredients
1 C. chicken broth
1 16-oz. pkg. spaghetti, cooked according to package directions
4-6 C. cooked chicken breast, diced
1 10 3/4-oz. can cream of mushroom soup (can substitute with cream of chicken or celery soup)
1 C. water
1/4 C. green bell pepper, diced
1/2 C. celery, diced
1 med. onion, finely chopped
1/2 lb. white or yellow American cheese, cubed

Ingredients
1 lb. leftover cooked chicken, diced
6 lg. Yukon potatoes, peeled and diced
1 bag fresh baby carrots, halved
1 lg. onion, diced
2 celery stalks, diced
3 C. water
1 chicken boullion cube
1 can cream of mushroom soup (cream of chicken or celery would work too)
Directions
Place diced potatoes, carrots, onion and celery in a crockpot. Mix 3 cups of water with chicken boullion cube and add to crockpot. Cook on high for approximately 3-4 hours. With a ladle, remove approx. 1-1/2 cups of chicken broth (you can always save this broth for another dish or lunch!) Add can of soup and the diced chicken. Stir well and cook for another 30 minutes. You can keep this simmering on low until ready to serve.

This recipe is easy and takes the work out of making dumplings. It’s creamier than the traditional chicken and dumplings. Calories and sodium content can be reduced using reduced calorie and low sodium soup. This can also be made in a soup pot on top of the stove by reducing the cooking times.

Ingredients
4 skinless boneless chicken breast halves — cubed
1/8 C. butter
1 pack dry Italian salad dressing mix
8 oz. cream cheese
1 can condensed cream of chicken soup
Directions
Put chicken, butter and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours. Add cream cheese and soup, mix together and cook on high for another ½ hour or until heated through and warm.
Serves 4.

4-6 boneless chicken breasts
1 sm. box stovetop cornbread stuffing
1 10-oz. pkg. frozen chopped broccoli (or mixture of broccoli and other veggies), thawed
1 can cream of broccoli with cheese soup
1/2 C. chicken broth
Directions
Lightly butter a 3 1/2-quart slow cooker/Crock Pot and place chicken breasts in the bottom. Mix together the remaining ingredients and place on top of chicken. Cover and cook on low 6-7 hours.
