One Dish Chicken & Rice Bake Recipe

Chicken and rice paired with a creamy mushroom sauce bake together for a delicious one-dish meal that’s easy to clean up.

Ingredients

* 1 can (10 3/4 oz.) Campbell’s® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
* 1 C. water*
* 3/4 C. uncooked regular long-grain white rice
* 1/4 tsp. paprika
* 1/4 tsp. ground black pepper
* 4 skinless, boneless chicken breast halves (about 1 lb.)

Directions

Stir the soup, water, rice, paprika and black pepper in a 2-quart shallow baking dish. Top with the chicken. Season with additional paprika and black pepper. Cover the baking dish. Bake at 375°F. for 45 minutes or until the chicken is cooked through and the rice is tender.

This is a very easy dish and delicious. It’s very important you brown the chicken first in hot oil.

Ingredients

* 1 whole chicken, cut up and seasoned with salt and pepper
* 1 C. rice, uncooked
* 1 can Campbells golden mushroom soup
* 11/2 can water (use the mushroom soup can)
* 1 packet Lipton onion soup mix

Directions

Brown the chicken in hot oil set aside. In a 9×13-inch casserole dish, mix the rice, golden mushroom soup, 11/2 can of water and the onion soup mix. place the chicken on top and bake uncovered in the oven at 350 degrees for an hour and a half. Serve with a vegetable.

Chicken & Macaroni Casserole Recipe

Ingredients

1/4 C. butter
3/4 C. hot milk
2 eggs, well beaten
1 1/2 C. diced cooked chicken
3 Tbs. grated cheddar cheese
2 C. cooked macaroni
2 tsp. chopped parsley
2 tsp. minced onion
2 Tbs. chopped green pepper
2 Tbs. chopped pimento salt and pepper to taste
1/3 C. dry bread crumbs.

Directions

Melt butter in milk, cool. Pour over beaten eggs; add remaining ingredients except bread crumbs. Season with salt and pepper. Pour into greased 1 1/2 quart casserole; sprinkle bread crumbs over top, bake at 350 degrees 30 to 40 minutes, until firm. Serve hot.

Linda’s Chicken Casserole Recipe

I got this recipe from my sister Linda Dean, and we all love it. We serve this with fresh lettuce salads. Sometimes I will add broccoli and flour to it, but they aren’t part of the original recipe.

Ingredients

1 box stuffing mix
1 can cream of mushroom, chicken or celery soup
shredded mozzarella cheese (or your favorite cheese)
4 chicken breasts (seasoned with garlic and herbs seasoning, salt and pepper to taste)
1 soup can full of water
cooking spray

Directions

Spray a baking dish with cooking spray. Mix soup with water, and mix with stuffing mix in baking dish. Place chicken breast on top, add cheese and cover and bake for 35-45 minute at 350 degrees, until chicken is done and cheese is melted.

Chicken Mushroom Mac Casserole Recipe

Ingredients

2 C. elbow macaroni
1 12-oz. can chunk white meat chicken, drained
2 C. cubed brie cheese
1 10.75-oz. can cream of mushroom soup
1 soup can water
salt and pepper to taste
1/2 C. freshly grated Romano cheese

Directions

Preheat oven to 375 degrees. Lightly spray a 2-qt. casserole dish with cooking oil spray. Set aside. Cook macaroni according to package directions. Drain. Spoon into large mixing bowl. Add all ingredients except Romano and stir well to combine. Spoon into prepared casserole dish. Sprinkle with Romano. Bake 20-25 minutes or until lightly golden and bubbly.

Ingredients

1 10.5 oz. can condensed cream of mushroom soup
1 10.5 oz. can condensed cream of chicken soup
1 can diced Ro-Tel tomatoes
2 1/2 C. cooked, shredded chicken breasts
2 C. shredded colby/jack cheese
1 bag nacho flavored Doritos
1/2 C. chicken broth

Directions

Crush doritos and spread in a 9×13-inch baking dish. Mix the soups, Ro-tel, chicken, chicken broth, and 1 C. of the cheese. Spread on top of Doritos. Top with additonal cheese and bake at 350 degrees fro 30 minutes.

1 chile in adobo (from a 7-oz. can), chopped
1/2 tsp. adobo sauce (from 7-oz. can)
8 oz. black beans, drained and rinsed
8 oz. whole kernel corn without salt
1 7-oz. petite cut diced tomatoes with jalapeños, drained
4 6-inch corn tortillas, cut in half then into 1/4-inch strips
light and dark meat from 1 sm. rotisserie chicken (approx. 1-lb. of meat), cut or shredded into bite-sized pieces
1 C. mild enchilada sauce
1/2 C. fresh squeezed lime juice
1 C. Mexican blend cheese (cheddar, Monterey jack, asadero, quesadilla)
1 C. sour cream
1 Tbs. cilantro, chopped, plus more for garnish
1 scallion, chopped, for garnish (optional)

Curried Chicken and Broccoli Casserole Recipe

Ingredients

1 pkg. frozen broccoli
1 whole chicken, boiled, deboned and cut into pieces
1 can cream of mushroom soup
1/2 C. mayonnaise
1 Tbs. curry powder
salt and pepper to taste

Directions

Boil chicken, and debone. Cut chicken into pieces. Mix cream of mushroom soup, mayonnaise, curry powder, salt and pepper in a bowl. Stir well. In a casserole dish, layer the ingredients in the following order: broccoli, sauce mixture, chicken, sauce mixture. Bake at 375 degrees for 45 minutes to 1 hour.
