Chicken Surprise Recipe

I made this by accident but it tastes great! This is perfect after a long day at work. You may also serve with cornbread.

Ingredients

3 lb. chicken strips
1 C. corn starch (to thicken)
1 lg. can vegetable soup
1 lg. can cream of chicken soup
1 lb. egg noodles or make your own dumplings
2 cans non-sweet cream
6 C. rice

Directions

Put all ingredients in your crockpot and let simmer all day. You may serve over rice or serve without.

Ingredients

4 Perdue Perfect Portion Chicken Breasts (Italian)
1 pkg. frozen broccoli
1 pkg. frozen white corn
1 can cream of chicken soup
1/4 C. cream cheese
2 mushrooms, chopped
1 C. shredded cheddar & mozzarella cheese
1 C. bread crumbs
salt, pepper, onion powder, garlic powder - to taste

Chicken Asparagus Stroganoff Recipe

Try this wonderful casserole with the combination of chicken and asparagus with the fresh herb of rosemary.

Ingredients

1 can cream of chicken soup, undiluted
1/4 C. milk
1/4 C. sour cream
2 C. cooked sliced asparagus
1 C. diced cooked chicken
1/4 tsp. rosemary
1/4 C. shredded cheddar cheese
Cooked rice or noodles

Directions

Grease a 1 qt. casserole. Combine soup, milk and sour cream. Pour half the soup mixture into the casserole; top with asparagus, chicken and rosemary. Pour remaining soup over chicken. Sprinkle with cheese. Bake at 350 degrees for 30 minutes. Serve with rice or noodles.

Yield: 4 servings

Chicken Poppyseed Casserole Recipe

I’ve been making this recipe for over 20 years. Everyone I’ve made it for loves it and asks for the recipe.

Ingredients

8 chicken breasts
2 C. sour cream
1 can cream of celery soup
2 cans cream of chicken soup
1/4 C. Poppyseed

Topping:
2-3 rolls Ritz crackers, crushed
2 pkg. sliced almonds
1 1/2 stick butter

You can use low fat or fat free sour cream and soups to cut calories.

Directions

Tear cooked chicken into bite-sized pieces. Put into large mixing bowl. Add other ingredients and mix thoroughly. Pour into 9×13-inch casserole dish, sprayed with cooking spray. Melt butter, add crackers and almonds. mix thoroughly. Spread on top of casserole.
Bake at 350 degrees for 30 minutes or until bubbly.

Kim’s Cheesy Chicken Recipe

Add the flavor of Uncle Ben’s Chicken and rice with this recipe of chicken and fresh herbs with cheese and anyone will just eat it all up.

Ingredients

8 chicken leg quarters
2 pkg. Uncle Ben’s Chicken Rice
1 tsp. rosemary
1 tsp. basil
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 soup can of milk
1 pkg. shredded mozzarella cheese

Directions

Mix rice according to package. Spread into bottom of 2 baking pans. Remove skin and fat from chicken and place on top of rice. Sprinkle with rosemary and basil. Mix the soups and milk in a small container and poor over chicken/rice mixture. Bake at 350 for approx. 45 minutes or until done. Cover all with cheese and put back into oven for 5 minutes or until cheese is melted. Serve.

Ritzy Chicken Casserole Recipe

This creamy casserole has lots of Ritz crackers for a salty crunch.

Ingredients

2 sleeves Ritz crackers
1 10 3/4 oz. can cream of chicken or cream of mushroom soup
1 8 oz. carton sour cream
1/2-1 C. chicken broth
4-6 boneless chicken breasts, cooked
4 oz. butter or margarine, melted

Directions

Crumble one sleeve of Ritz crackers in bottom of a 2-2 1/2 qt. casserole. Drizzle 1/2 of melted butter over crackers. Mix chicken with soup, sour cream and broth. Pour over crackers. Crush remaining sleeve of crackers over chicken mixture. Drizzle remaining melted butter over crackers. Bake at 300 degrees for 30-45 minutes.

Yield: 6 servings

Asparagus, Chicken and Wild Rice Casserole

Sally’s Chicken and Broccoli Casserole

Creamy sauce and a little curry kick make for a delicious chicken and broccoli casserole.

Ingredients

1-1/2 lb. chicken tenders
1 pkg. chopped broccoli cooked not too much
1 can cream of chicken soup
1 Tbs. lemon juice
1/2 C. mayonnaise
1 tsp. curry or to taste
paprika
Parmesan cheese

Directions

Cook chicken in oven in aluminum foil. Layer in casserole with broccoli. Pour over sauce and sprinkle with paprika and Parmesan. Bake 350° for 30 minutes or bubbling.

Serves 4-5.
