Wellington Chicken Casserole Recipe

Take your typical recipe for beef Wellington, switch out the meat, and make it a casserole! It’s delicious!

Ingredients

* 2 boneless, skinless chicken breast halves
* 2 tsp. butter
* 1 3-oz. package cream cheese
* 1/2 C. mushrooms, sliced
* 1 Tbs. green onion, chopped
* dash salt
* dash pepper
* one 4-oz. package crescent rolls

Directions

Preheat oven to 350 degrees.  Heat a skillet over medium heat with butter.  Add chicken and cook each side for about 3 minutes.  Grease a small baking dish and place chicken inside.  Combine cream cheese, mushrooms, salt, pepper, and onions in a bowl, then cover chicken with the mixture.  Unroll crescent rolls to make one big rectangle; seal any seams that there are in the dough.  Place dough over chicken and sauce, pinching edges to seal in the dish.  Bake for about 20 minutes.

Simplest Chicken Casserole Recipe

This is the easiest chicken casserole ever!

Ingredients

* 3 boneless, skinless chicken breasts
* 1 can cream of chicken soup
* 1 C. milk
* 1 sleeve of Ritz crackers
* 1 stick butter, melted

Directions

Preheat oven to 350 degrees. Cook chicken breasts until tender, then tear meat into pieces and place into a 9×13 inch pan.  Mix soup with milk and heat in the microwave until warm.  Pour mixture on top of chicken.  Smash Ritz crackers and combine them with the melted butter.  Pour crumbs over chicken and soup mixture.  Bake for about 40 minutes, or until crackers are browned.

* one 10-oz. package frozen spinach, thawed
* 3 yellow squash, thinly sliced
* 1 red bell pepper, cut into 1/2-inch pieces
* 1 yellow onion, thinly sliced
* 2 Tbs. peanut oil
* 3 C. shredded cooked chicken
* 12 small corn tortillas, cut into pieces
* one 10 3/4-oz. can cream of celery soup, undiluted
* one 8-oz. container sour cream
* one 8-oz. jar picante sauce
* one 4.5-oz. can chopped green chiles (do not drain)
* one packet of fajita seasoning
* 2 C. shredded Cheddar cheese

Chicken Spaghetti Casserole Recipe

Ingredients

* 8 oz. spaghetti, broken up
* 3 Tbs. butter
* 4 oz. mushrooms, sliced
* 1 clove garlic, minced
* 3 C. shredded cheddar cheese
* 1 1/2 C. milk
* 1 C. diced cooked chicken
* 1 tsp. Worcestershire sauce

Directions

Cook spaghetti according to package directions and drain. Melt butter in a large saucepan over medium-low heat. Add mushrooms and cook until tender, then reduce heat to low. Add garlic and cheese. Continue to cook mixture until cheese is melted, then blend in milk. Add chicken, Worcestershire, and spaghetti, then mix ingredients and place in a baking dish. Bake for 30 to 40 minutes at 350, or until hot and bubbly.

Chicken Artichoke Casserole Recipe

This is a healthy casserole filled with delicious chicken and nutritious artichoke and mushroom.

Ingredients

    * 8 pieces chicken
    * 1 can artichoke hearts, well-drained
    * 1 can cream of mushroom soup
    * 1 lb. mushrooms, sliced
    * 1/4 C. sherry
    * 1 stick butter
    * 1/2 tsp. grated lemon rind
    * salt, to taste
    * pepper, to taste

Directions

Sauté chicken in melted butter until lightly browned on both sides. Arrange chicken in a casserole dish. Season and place artichoke hearts throughout casserole. Sauté mushrooms in remaining butter for about 5 minutes. Add cream of mushroom soup and sherry. Stir until smooth. Pour mixture over chicken and artichokes. Cover and place in oven for about 1 hour, or until chicken is done.

Ingredients

* 6 chicken boneless breast halves
* 1/4 C. butter
* one 10.5-oz. condensed cream of chicken soup
* 8 oz. mushrooms, sliced
* 3/4 C. dry white wine
* 2 Tbs. chopped green bell pepper
* 1/4 tsp. leaf thyme, crushed
* 1 tsp. dried parsley flakes
* 1/4 tsp. tarragon or rosemary, crumbled
* 1/4 tsp. dried minced chives
* salt and pepper, to taste

Directions

Season chicken with salt and pepper, then brown chicken in butter in a skillet. Place chicken in a baking dish. Add soup to the drippings in the skillet and mix together. Slowly add dry white wine and stir until smooth. Add remaining ingredients and boil.
