This cheesy casserole is the perfect way to use up leftover or frozen turkey or chicken. A quick meal to throw together when you’re not feeling creative.

Ingredients
1 C. milk
1/2 C. salad dressing
1 lb. Velveeta cheese spread, cubed
2 C. cubed cooked chicken/Turkey
1 10 oz. pkg. frozen peas and carrots, cooked, drained
5 oz. spaghetti, cooked, drained
1 Tbs. chopped chives
Directions
Heat oven to 350 degrees. Combine milk and salad dressing; add Velveeta. Heat over low heat, stirring until sauce is smooth. Add remaining ingredients; mix well. Pour into 2 quarts casserole; bake at 350 degrees for 35-40 minutes.
Yield: 6-8 servings

Ingredients
1/2 C. butter or margarine
1 20 oz. pkg. frozen broccoli, cooked and drained
6-8 boned skinned half breasts of chicken
1 10 3/4 oz. can cream of mushroom soup
1 envelope dry onion soup mix
1/4 C. shredded cheese
Directions
Melt butter in bottom of 13×9x2-inch baking pan. Combine soups with broccoli. Rub chicken with additional butter; sprinkle with salt. Lay chicken over broccoli mixture and top with cheese. Bake in 350 degrees for 1 1/2-2 hours or until chicken is tender.
Yield: 6 servings

Ingredients
1 can cream of mushroom soup
salt and pepper to taste
1 can cream of chicken soup
1 can green chilies; chopped
1 small carton sour cream
1 small onion; chopped
12 corn tortillas; cut into 1/2″ strips
4 whole chicken breasts; cut into small pieces
1 lb. cheddar cheese; grated
Directions
Mix first 6 ingredients for sauce. Grease 3 qt. casserole dish. Layer tortillas, chicken and sauce. Put cheese on top. Refrigerate over night. Bake at 350 for 45 minutes covered and 15 minutes uncovered.

5-6 assorted chicken pieces
3 average sized potatoes, slices thin
1/3 C. Parmesan cheese
1/3 C. whipping cream
Sprinkle of paprika
Directions
Sauté chicken until done (about 40 minutes). Layer chicken, potatoes and cheese in large greased casserole. Pour milk over it and sprinkle with paprika. Cover loosely. Bake at 350 degrees for 45 minutes.

Ingredients
1/2 C. flour
1/4 tsp ground black pepper
2 eggs
2 Tbs water
1 C. puffed rice cereal, crushed
1 C. grated Parmesan cheese
1 package dry onion soup mix
6 (4-6-oz.) fresh boneless, skinless chicken breasts
1/4 C. butter or margarine, melted
Directions
Preheat oven to 375°F. Coat a 13×9x2-inch baking pan with vegetable cooking spray. In a shallow dish combine flour and pepper. Beat eggs and water in a small bowl. Combine rice cereal, Parmesan cheese and onion soup mix in a bowl. Dredge chicken in flour mixture, followed by a dip in the eggs. Roll in cereal until evenly coated. Arrange in a single layer in prepared baking dish and drizzle with melted butter. Bake, uncovered, for 30 minutes or until done. Serve warm.

6 pieces of Raw chicken
1 1/2 C. cooked rice
1 packet dry onion soup mix
aluminum foil (to make packets)
Directions
Lay out 3 pieces of aluminum foil. Put a layer of rice on top of the foil, sprinkle with onion soup mix and then lay 2 pieces of chicken on each on top of the rice. Sprinkle more onions soup mix. Wrap and bake in a 350-degree oven for 40-45 minutes.

Ingredients
2 pkg. frozen chopped broccoli
1 pkg. seasoned stuffing mix
2 C. chicken, cubed, cooked
1 tsp. sage dried, crushed
1/8 tsp. black pepper
12 slices American cheese
3 eggs
1 can chicken broth condensed
1 can evaporated milk
Directions
Preheat oven to 325 degrees. Lightly grease an oblong 2-qt. baking dish. Cook broccoli according to package directions. Drain and cut in pieces if large. Place in a large bowl. Stir in stuffing mix, chicken, sage and pepper until combined. Spoon half of the mixture into dish. Top with six slices of cheese. Cover with remaining stuffing mixture. In a medium bowl, beat eggs, then beat in chicken broth and evaporated milk. Pour evenly over top. Cover with foil and bake for 50 minutes or until top is set. Arrange remaining six slices cheese over top. Bake, uncovered, 3 minutes longer or until cheese melts.
