One-Pot Cheesy Chicken

Ingredients

8 oz chicken breast tenders
4 C. frozen chopped broccoli
2 C. cooked white rice
14 oz. fat-free chicken broth
1 10 3/4 oz. can Campbell’s 98% Fat-Free Cream of Chicken Soup
1 4 oz. can sliced mushrooms
8 oz. Velveeta Light Reduced-Fat Pasteurized Processed Cheese Product
Salt and pepper to taste

Directions

Use at least a 2 quart sauce pot. Boil Minute rice in water for 5 minutes. Drain and set aside. Rinse pot. Add the can of chicken broth and bring to a boil. Add chicken to pot and cook until no longer pink, about 10 minutes. Remove chicken to cutting board to chop into small pieces when cooled. Place broccoli into chicken broth and cook until tender.
Add rice, soup, seasonings and mushrooms.

Creamy Chicken Casserole Recipe

Ingredients

Casserole:
2 C. cooked chicken, cubed
9 oz. frozen mixed vegetables, slightly thawed
2 C. elbow macaroni, uncooked
1 C. American cheese, shredded
10 3/4 oz. condensed cream of celery soup
2 C. water

Topping:
1/2 C. plain bread crumbs
2 Tbs. margarine or butter, melted

Directions

In large bowl, combine all casserole ingredients; mix well. Pour into ungreased 8″ square (1 1/2 qt.) baking dish. Cover tightly; refrigerate 8 hours. Heat oven to 350 degrees. In small bowl, combine topping ingredients; mix well. Stir casserole; sprinkle with topping of 1/2-C. bread crumbs and 2 Tbs. margarine or butter, melted. Bake for 45 to 55 minutes or until bubbly and golden brown.
