Under Creamy/Cheesy+ Pasta
This super quick and easy casserole is so delicious you won’t believe it only has five ingredients! Creamy and comforting!

Ingredients
2 C. elbow macaroni
1 12-oz. can chunk white meat chicken, drained
2 C. cubed brie cheese
1 10.75-oz. can cream of mushroom soup
1 soup can water
salt and pepper to taste
1/2 C. freshly grated Romano cheese
Directions
Preheat oven to 375 degrees. Lightly spray a 2-qt. casserole dish with cooking oil spray. Set aside. Cook macaroni according to package directions. Drain. Spoon into large mixing bowl. Add all ingredients except Romano and stir well to combine. Spoon into prepared casserole dish. Sprinkle with Romano. Bake 20-25 minutes or until lightly golden and bubbly.

This casserole is absolutely delicious. The mixture of cream of mushroom soup with asparagus and chicken is to die for.

Ingredients
1 pkg. (10-oz.) frozen asparagus
1/2 C. flour
1/8 tsp. salt
1/8 tsp. ground black pepper
1/8 tsp. paprika
6 (4-6-oz.) fresh boneless, skinless chicken breasts
1/4 C. butter
1 can (10.75-oz.) condensed cream of mushroom soup
1 C. whipping cream
1/4 C. chopped pimiento
1/4 tsp. salt
1/8 tsp. hot pepper sauce
1/4 C. grated Parmesan cheese
Directions
Cook frozen asparagus according to package directions; rinse with cold water to stop cooking and drain. Arrange in a greased 13×9x2-inch baking dish; set aside. Preheat oven to 400 degrees.

This is a meatless recipe but you can add chicken if you like. Very easy and my family loves it.

Ingredients
2 boxes chopped broccoli, cooked and drained
1 can cream of mushroom soup
1 C. low fat or regular sour cream
1 chopped onion
1 8 oz. pkg. stuffing mix
1/2 C. butter or margarine
Directions
Combine first four ingredients in a large bowl. Mix well. In another large bowl, combine stuffing mix and butter or marg. and mix well. Place half of stuffing mix in a greased casserole dish. Top with broccoli mixture. Top with remaining stuffing mixture. Bake in a preheated 350 degree oven for 30 minutes.

Ingredients
4 whole chicken breasts, boned and skinned
3 eggs
1/2 C. of Italian flavored bread crumbs
6 Tbs. of butter
1 10 3/4 oz. of chicken broth
2 tsp. of lemon juice
6 oz. of sliced Muenster cheese
8 oz. of fresh mushrooms
Directions
Cut chicken breasts into bite size pieces. Soak several hours or overnight in 3 beaten eggs. Preheat oven to 350 degrees. Roll chicken pieces in bread crumbs, sauté with sliced mushrooms in margarine for 10-15 minutes. Place in casserole. Pour chicken broth over chicken and mushrooms. Sprinkle with lemon juice. Cover with sliced Muenster cheese. Bake uncovered for 30-40 minutes.

Ingredients
8-10 tortillas
2 C. chicken broth
3 C. diced cooked chicken
1 can mushroom soup, undiluted
1 can cream of chicken soup, undiluted
1 (10 oz.) can tomatoes with green chilies
1 medium onion, chopped and sauteed
Garlic powder to taste
Seasoned salt to taste
1/2 lb. sharp cheese, grated
Directions
Soak tortillas in chicken broth until broth is absorbed. Spread tortillas over bottom of large casserole dish. Add layers as follows: chicken, mushroom soup, chicken soup, tomatoes, onions, garlic, and seasoned salt. Top with grated cheese. Bake in 350 degree oven for 15 to 20 minutes or until cheese is melted and mixture is heated through.

Ingredients
2 Pheasants
2 Tbs. Beef dripping
1 Onion
1 Carrot
1 Stick of celery
Salt and pepper
2 Glasses red wine
Directions
Set oven to 350 F. Prepare the vegetables and chop them roughly. Joint the pheasants, using the breasts and legs only (this saves having too many bones to cope with). Heat the beef dripping in a thick frying pan and brown the pheasant joints. Remove from the pan and place in a casserole dish. Place the vegetables in the frying pan and cook for 2 minutes, add the red wine and bring to the boil. Pour the mixture over the pheasant joints, season and cover the casserole. Cook in the oven for 1-1 1/2 hours until tender.

Ingredients
1 16 oz. pkg. frozen broccoli spears
1 tsp. seasoned salt
3 c. diced, cooked chicken
1 can cream of chicken soup (undiluted)
2 Tbs. milk
1/3 C. mayonnaise
2 tsp. lemon juice
1/4 tsp. black pepper
3 Tbs. melted margarine
1 C. bread crumbs (or cracker crumbs)
1/3 C. shredded Cheddar cheese
Directions
Cook broccoli as directed on pkg.; drain. Place broccoli in an 8×12″ Pam-sprayed glass baking dish and sprinkle seasoned salt over the broccoli. Cover with the diced chicken. In a saucepan, combine soup, milk, mayonnaise, lemon juice, and pepper. Heat just enough to dilute the soup a little; pour over the chicken. Mix melted margarine, breadcrumbs and cheese and sprinkle over the soup mixture. Bake uncovered in a preheated 350 degree oven for 30 minutes or until mixture is hot and bubbly.

Ingredients
2 C. of uncooked instant rice
1 1/4 C. milk
1 C. water
1 envelope ranch dressing mix
1 lb. boneless, skinless chicken breasts; cut into 1/2″ strips
1/4 C. butter or margarine; melted
paprika
Directions
Place rice in a greased shallow 2 qt. baking dish. In a bowl, combine the milk, water and salad dressing mix; set aside 1/4 C. Pour remaining mixture over rice. Top with chicken strips. Drizzle with butter and remaining milk mixture. Cover and bake at 350 for 35 to 40 minutes or until rice is tender and chicken juice runs clear. Sprinkle with paprika.

This recipe was invented by my Great Aunt Donna. We love it! Quick and easy and can be put together ahead and frozen to just thaw and bake.

Ingredients
1 C. mayonnaise
3/4 C. shredded sharp cheddar cheese
1/4 C. breadcrumbs
3/4 Tbs. curry powder
1 Tbs. lemon juice
2 cans cream of chicken soup
2-3 boxes frozen broccoli spears, cooked
4-6 boneless, skinless chicken breasts, cooked - well browned
Directions
Place broccoli in bottom of casserole dish and place cooked chicken on top of broccoli. Mix together remaining ingredients except cheese. Spoon mixture over chicken and top with cheese and breadcrumbs. Bake at 350 degrees for 30 minutes.
