Almost Thanksgiving Casserole Recipe

I have a large family and we get together for Sunday dinners. Even so, we often have leftovers. I make this casserole and stick it in the freezer. It freezes very well, and when I don’t feel like cooking or if someone needs a meal (some emergency or illness), this is a great “take to them” type meal. I have even used left over pork or ham. All of my kids love it so much they do it for their own families. When you have the casserole meal, it is just like having them all for Sunday dinner again. Everyone loves Thanksgiving meals, and this one can be enjoyed all year around.

Stuffed Peppers with Turkey and Vegetables Recipe

Ingredients

4 green bell peppers, tops removed and seeded
1 lb. ground turkey
2 Tbs. olive oil
1/2 onion, chopped
1 C. sliced mushrooms
1 zucchini, chopped
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1 C. fresh spinach
1 14.5-oz. can diced tomatoes, drained
1 Tbs. tomato paste
Italian seasoning to taste
garlic powder to taste
salt and pepper to taste

Chicken Casserole Recipe

A great chicken dish using left over chicken or turkey!

Ingredients

1 1-lb. bag frozen broccoli florets
8-10 oz. leftover chicken or turkey, cubed or sliced
1 10.5-oz. can fat free cream of chicken soup
3/4 C. low-fat mayonnaise
3/4 C. low-fat milk
1 Tbs. lemon juice
1 C. shredded 2-percent cheddar cheese

Directions

Place broccoli in a microwave 8×8-inch dish and microwave on high for 7 minutes. Place chicken or turkey evenly on top of broccoli. Mix together soup, mayonnaise, milk and lemon juice. Pour over chicken broccoli mixture. Sprinkle with cheese and bake in a 350-degree oven for about 20 minutes or until cheese is melted and casserole is bubbly.

Crockpot Lasagna Recipe

1 lb. of lean ground turkey
1 onion chopped
1/8 tsp. garlic powder
2 15 oz. cans tomato sauce
1 6 oz. can tomato paste
1 1/2 tsp. salt
1 tsp. oregano
1 12 oz. carton of fat-free cottage cheese
1/2 C. grated parmesan cheese
12 oz. lasagna noodles, uncooked
12 oz. shredded non-fat mozzarella cheese

Taco Potato Casserole Recipe

This is a very simple and healthy meal, which is easy to rebuild in any way you want.

Ingredients

1 bag of frozen dinner brown potatoes
1 lb. of ground turkey
1 pkg. of taco seasoning mix
1 can of chopped chili peppers
2 C. of grated cheddar cheese

Directions

Brown ground turkey and drain. Add taco seasoning and follow directions on the pkg. for taco meat. Grease a casserole dish. Mix together meat mixture, chili peppers, dinner browns, and 1 C. of cheese and put into casserole. Top with remaining cheddar cheese. Bake at 350 degrees for 45 minutes or until hash browns are cooked.

Turkey Casserole Recipe

This macaroni-based casserole with lean turkey and plenty of cheddar cheese is sure to please the family.

Ingredients

3 C. turkey
8 oz. spinach (drained) or broccoli or green beans
12 oz. sharp cheddar cheese
16 oz. elbow macaroni
3 eggs
3/4 stick of butter
16 oz. fat free chicken broth

Directions

Boil macaroni for 5 minutes. In a mixing bowl pour butter over macaroni, mix in cheese, add eggs, add spinach, then add turkey. While mixing add chicken broth, put in pan and bake for 11-14 minutes on 450.
