Ingredients
3 C. cooked brown rice
1 (10-oz.) pkg. frozen tiny green peas
2 C. cooked chopped chicken breast
1/2 C. low-fat mayonnaise
1/2 C. reduced-fat sour cream
1/3 C. toasted slivered almonds
2 tsp. light soy sauce
1/2 tsp. pepper
1/2 tsp. garlic powder
1/2 tsp. dried tarragon
Directions
Heat oven to 350 degrees. Coat a 3-qt. baking dish with cooking spray. In a large bowl, combine cooked rice, peas, chicken, mayonnaise, sour cream, almonds, soy sauce, pepper, garlic powder and tarragon. Spoon into baking dish. Cover; bake 15 to 20 minutes or until hot throughout. Makes 6 servings.

Ingredients
1 pkg. boneless skinless chicken
1 pkg. white Campbell’s mushrooms
1 jar Italian dressing
1 16 oz. bag rice
Directions
Rinse and clean chicken in cold water. Marinate chicken in Italian dressing for 3-4 hours. Cook rice according to package instructions until tender. Saute mushrooms. Put chicken in the bottom of a pan and put rice on top. Cover with mushrooms and Pour Italian dressing over. Cook in 350 degree oven for 45 minutes or until chicken is cooked.

Ingredients
1 can Campbell’s cream of chicken and broccoli soup
1-1/2 C. water
1/8 tsp black pepper
3/4 C. uncooked regular long grain rice
Directions
In a 2 qt. sauce pan, combine soup, water and black pepper over medium high heat. Heat to boiling; stir in rice. Reduce heat to low; cover, cook 25 minutes or until rice is tender and mixture is creamy, stirring often.

Ingredients
2 boneless, skinless chicken breasts halves (1 1/2 lb. total)
5-oz. package brown and wild rice or long-grain and wild rice
1 1/2 C. water
9-or10-oz. package frozen added peas
1/4 C. dry white wine or water
3/4 tsp. dried Italian seasoning
Directions
Preheat oven to 375. Rinse chicken breasts, pat dry, and set aside. In a 2-qt. glass baking dish or casserole, combine rice and water. Discard seasoning packet that came with rice. Stir in remaining ingredients and arrange chicken on top. Cover dish and bake about 1 hour or until chicken and rice are tender.

4 C. chicken, diced
1 package California blend frozen vegetables (cauliflower, broccoli,
carrots)
1 box Chicken Rice-a-Roni
1 can nacho cheese soup
Directions
Stir fry chicken until golden brown. In saucepan, heat vegetables. Cook Rice-A-Roni as directed on package. Combine all in a casserole dish and mix in nacho cheese soup. Bake at 350 degrees F for 30 minutes or until steaming hot.

1 8 oz. can stewed tomatoes
3/4 C. quick-cooking brown rice
1/2 C. raisins
1 Tbs. lemon juice
3 tsp. curry powder
1 cube chicken bouillon
1/2 tsp. ground cinnamon
1/4 tsp. salt
2 cloves garlic, minced
1 bay leaf (optional)
3/4 lb. skinless, boneless chicken breast halves, cut into 1-inch pieces
Directions
Preheat oven to 350 degrees. In a skillet, stir together water, stewed tomatoes, brown rice, raisins, lemon juice, curry powder, bouillon, ground cinnamon, salt, garlic, and bay leaf.
Bring to a boil; then stir in chicken. Transfer mixture to a casserole dish. Cover, and bake in the preheated oven 45 minutes, stirring occasionally, until rice is tender and chicken juices run clear.
