Sweet and Sour Chicken Casserole Recipe

Ingredients

* 1 lb. chicken tenders
* 1 8-oz. can pineapple chunks, drained and juice reserved
* 1 C. uncooked rice
* 2 carrots, thinly sliced
* 1 green bell pepper, cut into small pieces
* 1 large onion, chopped
* 3 cloves garlic, minced
* 1 can chicken broth
* 1/3 C. soy sauce
* 3 Tbs. sugar
* 3 Tbs. apple cider vinegar
* 1 Tbs. sesame oil
* 1 1/2 tsp. ground ginger

Simple Chicken and Rice Casserole Recipe

This is the easiest chicken casserole you’ll ever make!

Ingredients

* 1 C. water
* 1 can cream of chicken soup
* 1 can cream of celery soup
* dash of parsley
* 2 Tbs. red wine
* 3/4 C. white long grained rice
* 2 lb. chicken breasts
* 1 envelope dry onion soup mix

Directions

Preheat oven to 350 degrees.  Mix together soups, parsley, wine, water, and rice.  Lightly grease a casserole dish and add rice mixture.  Lay chicken (with skin facing up) on top of rice.  Sprinkle onion soup mix over chicken and cover with foil.  Bake for about an hour or until chicken is cooked through.  Let stand for 10 minutes and serve.

Chicken Alfredo Casserole Recipe

This recipe uses light Alfredo sauce and delicious vegetables to make a healthier version of your typical chicken casserole.

Ingredients

* one 10-oz. container refrigerated light Alfredo pasta sauce
* 1/2 C. milk
* 2 1/2 C. cooked wild rice
* 2 C. cubed cooked chicken
* 1 C. frozen peas
* 1/3 C. chopped roasted red sweet peppers
* 1 Tbs. fresh basil
* 1 C. soft bread crumbs
* 1 Tbs. melted butter

Directions

Preheat oven to 350 degrees. Combine pasta sauce and milk in a bowl, then stir in rice, chicken, peppers, peas, basil, and nuts. Transfer to 1 1/2-quart baking dish. Cover and bake for 30 minutes, then uncover and stir. Combine bread crumbs and melted butter and sprinkle on top of casserole. Bake, uncovered, for another 25 minutes or until heated through and golden.

Scalloped Chicken with Almonds Recipe

Ingredients

* 3 C. cooked rice
* 3 C. cooked diced chicken
* 3 Tbs.butter
* 3 Tbs. flour
* 2 C. chicken broth
* 1 C. milk
* salt and pepper
* 2 C. sliced sauteed mushrooms
* 1/2 C. slivered almonds
* 1 jar chopped pimiento, drained
* buttered breadcrumbs

Directions

Melt butter over low heat in a medium saucepan, then stir in flour.  Next, add broth, milk, salt, and pepper. Stir constantly until mixture thickens. Grease a 2-quart baking dish, then Spread half of the rice on the bottom of the baking dish. Add half of the chicken, half of the sliced mushrooms, half of the slivered almonds, and pimiento. Pour in half of the sauce. Repeat layers. Finally, sprinkle breadcrumbs over the top. Bake scalloped chicken for 45 minutes at 350 degrees.

    * 1 C. water*
    * 3/4 C. uncooked regular long-grain white rice

    * 1/4 tsp. ground black pepper
    * 4 skinless, boneless chicken breast halves (about 1 lb.)

Directions

Stir the soup, water, rice, paprika and black pepper in a 2-quart shallow baking dish. Top with the chicken. Season with additional paprika and black pepper. Cover the baking dish. Bake at 375°F. for 45 minutes or until the chicken is cooked through and the rice is tender.

Grandma Annabelle’s Chicken in Rice Recipe

This is a very easy dish and delicious. It’s very important you brown the chicken first in hot oil.

Ingredients

* 1 whole chicken, cut up and seasoned with salt and pepper
* 1 C. rice, uncooked
* 1 can Campbells golden mushroom soup
* 11/2 can water (use the mushroom soup can)
* 1 packet Lipton onion soup mix

Directions

Brown the chicken in hot oil set aside. In a 9×13-inch casserole dish, mix the rice, golden mushroom soup, 11/2 can of water and the onion soup mix. place the chicken on top and bake uncovered in the oven at 350 degrees for an hour and a half. Serve with a vegetable.

Lewis Surprise Recipe

Ingredients

* leftover turkey or chicken
* 1 can cream of mushroom soup
* frozen broccoli spears
* sliced American cheese
* French’s original fried onion rings
* instant white or brown rice

Directions

heat oven to 375 degrees. In a long casserole dish , place pieces of chicken/turkey to cover bottom of dish. Place frozen broccoli spears on top, and then cover the chicken/turkey. Layer slices of cheese on top of broccoli spears. Mix mushroom soup  with a can of water, and pour over entire dish. Place in oven and bake approximately 30 to 45 minutes, until bubbly and light brown.  Remove from oven and place onion rings on top of mixture. place back in oven for approximately 15 minutes. Meanwhile cook instant white or brown rice on stove. Place rice on plate topped with mixture of chicken turkey. Serve with a small salad if you wish, but everything is in the casserole.
