Chicken Tater Tot Casserole Recipe

Ingredients

* 2 lbs. ground chicken
* 1 white onion, chopped
* 1/2 C. water
* one 10 3/4-oz. can cream of mushroom soup
* 2 C. frozen vegetables of your choice
* 1 lb. frozen tater tots
* pepper, to taste

Directions

Preheat oven to 375 degrees.  Heat a skillet over medium heat and brown ground chicken and onion.  Add pepper, water and soup.  Heat until bubbling. Add vegetables and stir until vegetables are heated through.  Pour mixture into a casserole dish, then cover with a layer of tater tots. Bake for about 45 minutes or until the tater tots are crisp.

Ingredients

* 2 lbs. potatoes, cut up in small cubes
* 1 stick margarine, melted
* 1 C. chopped onions
* 8 oz. shredded cheddar cheese
* 1 can cream of chicken soup
* 1 tsp. salt
* 1 tsp. garlic powder
* 1 pt. sour cream
* 2 C. crackers, crushed

Directions

Mix all ingredients and put in 9×13-inch pan. Top with crackers mixed with melted margarine. Bake in oven at 350 degrees for 1 1/2 hours.

Delicious blend of fresh spring chicken, vidalia onions, yukon gold potatoes, portabella mushrooms, black olives, peas and roasted red peppers, with a fresh hint of lemon & herbs.

Ingredients

* 4 boneless skinless chicken breasts
* 2 large portabella mushrooms
* 4 large yukon gold potatoes
* 4 roasted red peppers, from jar
* 12 large black olives, pitted
* 2 vidalia or yellow onions, medium
* 2 cans artichoke hearts
* 4 large cloves of garlic, sliced
* 1 ½ cups frozen peas
* 1 Tbs. sea salt or regular salt, more for later
* 1 Tbs. crushed black pepper, more for later
* 1 tsp. paprika, more to sprinkle
* 1 Tbs. garlic powder
* 1 tsp. dried or 1 Tbs. fresh chopped basil
* 1 Tbs. fresh chopped Parsley, more for garnish (dried is fine)
* 1 tsp. Cumin
* 1 C. Italian breadcrumbs
* ½ C. grated Parmesan or Romano cheese
* 2 Tbs. Olive Oil (or canola), plus 2 Tbs. for later
* 1 C. white cooking wine
* 2 Tbs. fresh lemon juice

Creamy Chicken Stew Recipe

Use your chicken leftovers in this easy crockpot casserole that will even please the kids!

Ingredients

1 lb. leftover cooked chicken, diced
6 lg. Yukon potatoes, peeled and diced
1 bag fresh baby carrots, halved
1 lg. onion, diced
2 celery stalks, diced
3 C. water
1 chicken boullion cube
1 can cream of mushroom soup (cream of chicken or celery would work too)

Directions

Place diced potatoes, carrots, onion and celery in a crockpot. Mix 3 cups of water with chicken boullion cube and add to crockpot. Cook on high for approximately 3-4 hours. With a ladle, remove approx. 1-1/2 cups of chicken broth (you can always save this broth for another dish or lunch!) Add can of soup and the diced chicken. Stir well and cook for another 30 minutes. You can keep this simmering on low until ready to serve.

Chicken Casserole Recipe

This wonderful recipe was given to me by my sister over 30 years ago. I do not know where she got it other than word-of-mouth. It is delicious and my family has enjoyed it over the years.

Ingredients

3 C. cooked chicken, cubed
1/2 C. diced celery
1 C. sliced water chestnuts, drained
1 1/2 tsp. pepper
1/2 tsp. lemon juice
1 C. mayonnaise
1 1/4 tsp. minced onion
1 C. grated cheddar cheese
1/2 C. slivered almonds
1 1/2 C. crushed potato chips

Directions

Toss all ingredients except potato chips. Pour into lightly greased casserole dish. Sprinkle crushed potato chips on top. Bake uncovered at 375 degrees for 30-40 minutes.

Taco Potato Casserole Recipe

Ingredients

1 bag of frozen dinner brown potatoes
1 lb. of ground turkey
1 pkg. of taco seasoning mix
1 can of chopped chili peppers
2 C. of grated cheddar cheese

Directions

Brown ground turkey and drain. Add taco seasoning and follow directions on the pkg. for taco meat. Grease a casserole dish. Mix together meat mixture, chili peppers, dinner browns, and 1 C. of cheese and put into casserole. Top with remaining cheddar cheese. Bake at 350 degrees for 45 minutes or until hash browns are cooked.

Quick and Easy Creamy Chicken and Potatoes Recipe

Ingredients

1 cut up chicken
1 1 lb. bag shoe string potatoes
2 small cans cream of chicken soup
1/2 can water
Salt and pepper to taste

Directions

Salt and pepper chicken and place in baking dish. Bake uncovered at 350 degrees for 30-35 minutes. Remove from oven and place chicken on plate. Place potatoes in baking dish and spread out. Add baked chicken to pan. Mix chicken soup with 1/2 can of water and pour over chicken and potatoes. Place in oven and bake another 20-30 minutes until light brown and bubbly. Add a green veggie or a side salad and you are done.
