Under Pasta
This recipe was adapted from Giada De Laurentiis’ from a show about cooking with kids. It’s a great version of “mac and cheese” that pleases kids and adults alike.

Ingredients
1 C. any small pasta
2 Tbs. olive oil
1/2 C. cubed chicken breast (1-inch cubes)
1/2 C. diced onion (about 1/2 a small onion)
1 clove garlic, minced
1 (14.5-oz.) can diced tomatoes with juice
1 C. shredded mozzarella
1/4 C. chopped fresh flat-leaf parsley
1/4 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1/4 C. bread crumbs
1/4 C. grated Parmesan
1 Tbs. butter, plus more for buttering the baking dish
Directions
Preheat the oven to 400 degrees F.

Ingredients
1 pkg. “No Yolk” medium noodles
1 9.75-oz. can Premium White Chicken 98% Fat Free
1 can Campbell’s Cream of Chicken soup (low fat or healthy choice)
1 can Campbell’s Cream of Celery soup (low fat or healthy choice)
1 8-oz. pkg. lowfat cheddar cheese shredded
1 box chicken stovetop stuffing (low sodium)
1 C. fat free sour cream
1 C. low-fat mayonnaise
1/2 C. green pepper (optional)
salt and pepper to taste

A rich and delicious do-ahead dinner. Just add a salad and garlic bread.

Ingredients
1 box Manicotti pasta shells
1 1 1/2-lb. pkg. chicken breast strips
1 lg. jar spaghetti sauce
1 lg. pkg shredded Italian cheese
garlic salt
pepper
Directions
Season chicken strips with garlic salt and pepper. Stuff chicken strips into pasta shells. In a large baking dish, pour enough spaghetti sauce to cover bottom of dish. Place stuffed shells in baking dish. Pour enough spaghetti sauce to cover shells. Sprinkle cheese over sauce until all sauce is covered. Pour spaghetti sauce over cheese until all cheese is covered. Again, sprinkle cheese over sauce until all sauce is covered. Cover dish with plastic wrap and refrigerate overnight. Next day – Preheat oven to 400 degrees. Bake for 1 hour. Let stand 5 minutes. Serve.

I made this by accident but it tastes great! This is perfect after a long day at work. You may also serve with cornbread.

Ingredients
3 lb. chicken strips
1 C. corn starch (to thicken)
1 lg. can vegetable soup
1 lg. can cream of chicken soup
1 lb. egg noodles or make your own dumplings
2 cans non-sweet cream
6 C. rice
Directions
Put all ingredients in your crockpot and let simmer all day. You may serve over rice or serve without.

Ingredients
1 can cream of chicken soup, undiluted
1/4 C. milk
1/4 C. sour cream
2 C. cooked sliced asparagus
1 C. diced cooked chicken
1/4 tsp. rosemary
1/4 C. shredded cheddar cheese
Cooked rice or noodles
Directions
Grease a 1 qt. casserole. Combine soup, milk and sour cream. Pour half the soup mixture into the casserole; top with asparagus, chicken and rosemary. Pour remaining soup over chicken. Sprinkle with cheese. Bake at 350 degrees for 30 minutes. Serve with rice or noodles.
Yield: 4 servings

1 C. dry fusilli pasta
3 Tbs. olive oil
6 chicken tenderloins, cut into chunks
1 Tbs. dried minced onion
Salt and pepper to taste
Garlic powder to taste
1 Tbs. dried basil
1 Tbs. dried parsley
1 10 3/4 oz. can condensed cream of chicken soup
1 10 3/4 oz. can condensed cream of mushroom soup
2 C. frozen mixed vegetables
1 C. dry bread crumbs
2 Tbs. grated Parmesan cheese
2 Tbs. butter, melted
Directions
Preheat oven to 400 degrees. Lightly grease a medium baking dish. Bring a large pot of lightly salted water to a boil. Place fusilli pasta in the pot, cook for 8-10 minutes, until al dente, and drain. Heat the oil in a skillet over medium heat.

A whole meal-in-one, this casserole is bit more complicated than most, but worth the trouble.

Ingredients
1 8 oz. pkg. tortellini
8 oz. Monterey Jack cheese, divided
4 chicken breasts boned skinned, cubed
Flour for coating
3 Tbs. olive oil
3/4 C. onion, chopped
1 Tbs. chicken bouillon granules
1 C. chicken broth
1 4 oz. can mushrooms, drained
1/2 C. sour cream
Directions
Preheat oven to 300 degrees. Cook tortellini 5 minutes less than package directions indicate, so that in the oven, the pasta still will be able to absorb juices without becoming mushy. Drain well and place in bottom of lightly greased 8 1/2×11 inch pan. Thinly slice 4 oz. of the cheese and spread over the pasta. Roll chicken breasts in flour and lightly brown in olive oil.
