Chicken Delight Recipe

I found this recipe from a friend a year ago. It’s so simple and I’ve been making it ever since!

Ingredients

1 16-oz. bag stuffing (any flavor)
1 pkg. boneles skinless chicken breasts
1/2 onion
1 tub sour cream
1 can cream of chicken soup

Directions

Boil chicken breasts until done. Remove from pan and break/cut into bite-sized pieces. Make stuffing by package directions. In a medium sized bowl, mix together cream of chicken soup and sour cream to taste. If you like layers, put chicken on the bottom, spread stuffing on top of that, and then add soup and cream mixture to the top. The other option is to mix it all together. Bake at 350 degrees for about 20-25 minutes.

Popcorn Chicken Casserole Recipe

Simple easy recipe when you are short on time.

Ingredients

1 pkg. popcorn chicken
1 jar chunky garden vegetable Ragu spaghetti sauce
1 pkg. four or six blend shredded cheese

Directions

Preheat oven to 350 degrees. Put popcorn chicken in casserole dish and cook for 20 minutes. Next pour chunky Ragu sauce over chicken and sprinkle with the blended chicken cook until cheese is lightly brown. Serve with your favorite side dish.

Easy Chicken Pot Pie Recipe

Fast and easy dinner kids will love! My kids wanted something quick for dinner and I wanted something healthy so I through this together and they loved it.

Ingredients

2-3 cans mixed vegetables
1 jar chicken gravy
1 chicken bouillon cube
chicken breast (any form, however much you desire)
2 C. biscuit mix
1 C. milk
1 tsp. Italian spice mix

Directions

Drain cans of mixed vegetables and pour into a mixing bowl. Add chicken, gravy, and spices. Mix bouillon cube with a small amount of hot water until dissolved. Add to bowl. Mix well. Pour into a greased 9×13 baking dish. In another bowl, add biscuit mix and milk mix together and spread over top of veggies in baking dish. Bake at 350 degrees for 30 minutes. Let set for 5 minutes when done.

Linda’s Chicken Casserole

I got this recipe from my sister Linda Dean, we all love it. It is a chicken casserole. We serve this with fresh lettuce salads. Sometimes I will add broccoli and flour to it but that wasn’t part of the original recipe.

Ingredients

1 box stuffing mix
1 can cream of mushroom, chicken or celery soup
shredded mozzarella cheese (or your favorite cheese)
4 chicken breasts (seasoned with garlic and herbs seasoning, salt and pepper to taste)
1 soup can full of water
cooking spray

Directions

Spray a baking dish with cooking spray. Mix soup with water, and mix with stuffing mix in baking dish. Place chicken breast on top, add cheese and cover and bake for 35-45 minute at 350 degrees, until chicken is done and cheese is melted.

1 (10 1/2 oz.) can condensed cream of celery soup, undiluted
1/2 C. milk
1 (10 oz.) pkg. frozen peas, cooked
1 (3 oz.) can sliced mushrooms, drained
1 (8 oz.) water chestnuts, drained and sliced
1/4 C. crushed potato chips

Ingredients

2 C. all-purpose flour
1 tsp. salt
3/4 C. lard
6 Tbs. cold water
1/2 C. butter
1/2 C. all-purpose flour
1 tsp. salt
Black pepper to taste
2 Tbs. finely chopped onion
3 C. chicken broth
1 1/2 C. sliced mushrooms
3 Tbs. butter
3 C. cooked chicken, chopped
2 carrot, finely chopped
2 stalks celery, finely chopped
2 potatoes, peeled and cubed

Easy Chicken Pie

An easy version of making the ever so famous chicken pot pie.

Ingredients

3 C. cooked, diced chicken
1 (10 oz.) pkg. frozen mixed vegetables
1 (10 3/4 oz.) can Cream of Chicken Soup
1 C. chicken broth
1/4 tsp. pepper
1 C. Bisquick
3/4 C. milk
1/4 C. margarine, melted

Directions

Preheat oven to 400 degrees. In 2 qt. shallow baking dish, spread chicken and vegetables. Stir together soup, broth, and pepper in a small mixing bowl. Pour over chicken mixture. Combine Bisquick, milk and butter in separate bowl; stir until smooth. Pour this mixture over other ingredients in baking dish. Bake for 45 -50 minutes or until golden brown.

Chippy Chicken Recipe

Add some crunch to your chicken and then some Mexican blended cheeses to make this dish delicious.

Ingredients

2 lb cooked chicken-shredded
1 can cream of mushroom soup
1 can cream of chicken soup
16 oz sour cream
1 large bag tortilla chips (such as Doritos)
1 large can rotel tomatoes
2 C. shredded Mexican blend cheese

Directions

Mix together the chicken, soups, sour cream and tomatoes. In a deep casserole dish, begin by placing a layer of chips, the chicken mixture and then cheese. Repeat process until all is used. Ending with the cheese on top. Bake at 350 for 45 minutes.

Ritzy Chicken Casserole Recipe

Ingredients

2 sleeves Ritz crackers
1 10 3/4 oz. can cream of chicken or cream of mushroom soup
1 8 oz. carton sour cream
1/2-1 C. chicken broth
4-6 boneless chicken breasts, cooked
4 oz. butter or margarine, melted

Directions

Crumble one sleeve of Ritz crackers in bottom of a 2-2 1/2 qt. casserole. Drizzle 1/2 of melted butter over crackers. Mix chicken with soup, sour cream and broth. Pour over crackers. Crush remaining sleeve of crackers over chicken mixture. Drizzle remaining melted butter over crackers. Bake at 300 degrees for 30-45 minutes.

Yield: 6 servings

Crispy Chicken Bake

Puffed rice cereal makes a surprise appearance in this crunchy chicken dish.

Ingredients

1/2 C. flour
1/4 tsp ground black pepper
2 eggs
2 Tbs water
1 C. puffed rice cereal, crushed
1 C. grated Parmesan cheese
1 package dry onion soup mix
6 (4-6-oz.) fresh boneless, skinless chicken breasts
1/4 C. butter or margarine, melted

Directions

Preheat oven to 375°F. Coat a 13×9x2-inch baking pan with vegetable cooking spray. In a shallow dish combine flour and pepper. Beat eggs and water in a small bowl. Combine rice cereal, Parmesan cheese and onion soup mix in a bowl. Dredge chicken in flour mixture, followed by a dip in the eggs. Roll in cereal until evenly coated. Arrange in a single layer in prepared baking dish and drizzle with melted butter. Bake, uncovered, for 30 minutes or until done. Serve warm.
